Secret nutrient found in tomatoes: Lycopene

Tomatoes are great source of vitamins and are often used when making salads. When eaten raw, tomatoes contain the phytochemical compound Lycopene, a very powerful antioxidant. In fact, when you cook tomatoes (such as in sauces), more lycopene is released from the tomato so eating tomatoes raw or cooked has healthful benefits.
Greek Village Salad
1 serving, 1 small salad bowl
2 tomatoes sliced* (cut into thick wedges)
1/2 cucumber sliced (approx. 10 slices)
Greek Feta cheese crumbled (1-2 tbsps)
1/2 onion sliced thinly, to taste (optional since I'm not a fan!)
salt, pepper, oregano to taste
1 tbsp olive oil
1 tbsp vinegar
2-3 Greek Kalamata olives (optional)
Mix all ingredients together and enjoy this traditional Greek Village salad!
*NOTE: When selecting tomatoes, medium-sized on the vine tomatoes are best; they are firm and a deeper red color.
